Tomatoes in January? Why Not!

It is January in Michigan, which means cold temperatures and grey skies for days on end. Now is the time when we truly miss our gardens and the fresh vegetables that we pick on a daily basis throughout the summer. We really miss our farm to table cooking! Alas, we must soldier on through the long days of winter and find new ways to inspire in the kitchen. So even though the tomatoes in the grocery stores are not quite as firm or as sweet as the ones that we pick during the summer, we can still utilize them to create delicious recipes to enjoy. Here is an easy recipe for roasted tomatoes that can be the building block for countless delicious dishes. We start by gathering a variety of tomatoes, red and vidalia onions, shallots, and garlic cloves. Chop the large tomatoes and the onions into chunks and place everything on baking sheets lined with parchment paper. Drizzle with olive oil and roast . This becomes our base for countless recipes. Puree in a blender with milk of your choice, salt and pepper and you have delicious tomato soup. level up your avocado toast with a poached egg and the roasted tomato medley. How about an arugula salad with feta and roasted tomatoes? Or my favorite, pasta with roasted tomatoes and freshly grated parmesan cheese. You can add chunks of eggplant, zucchini, and bell peppers to assemble a ratatouille . It would make a delicious topping for grilled chicken or fish, and a wonderful stuffing for a hearty omelet. Have fun with it, be inspired, and create something scrumptious to fill your bellies and warm your souls during these cold winter days.
