Ingredients:
3 large sweet potatoes
½ Cup non dairy milk
½ Cup light brown sugar
½ Cup white sugar
2 tsp cinnamon
½ tsp ginger
½ tsp nutmeg
2 tsp vanilla
2 TBSP flour
½ Cup melted margarine
2 eggs beaten
Topping:
½ Cup Flour
1 Cup light brown sugar
1 tsp cinnamon
5 TBSP melted margarine
1 Cup mini marshmallows
Instructions:
Using a fork poke holes in sweet potatoes. Bake for 1 hour in a 400 degree oven. When potatoes cool, scrape the inside into a large bowl. Mash the potatoes. Add the nondairy milk and mix until creamy. Add all remaining ingredients and mix until well blended. Spoon mixture into a 9 x 9 baking dish. Mix together the topping ingredients until crumbly. Spoon topping mixture evenly on top of sweet potato mixture. Bake at 350 degrees for 30 minutes or until the topping is bubbling and brown.
