Ingredients:
2 pounds of hamburger
Season with ⅛ salt, ⅛ pepper, ½ garlic and ½ onion powder
2 eggs
1 Jar of Tomato Sauce
½ cup tomato sauce in meat mixture
1 Cup tomato sauce for the bottom of the pan
½ Cup Seasoned bread crumbs for binding, add more if needed
1 box of potato pancake mix
1 large piece of parchment paper
Large aluminum pan
1 ten ounce bag of frozen peas or mixed vegetables
Directions:
Prepare the potato pancake mix in a bowl according to the directions on the box. Set aside.
Place meat in a bowl and add all of the spices, eggs, breadcrumbs and ½ cup of tomato sauce, mix well. Add bread crumbs if needed to bind the mixture.
At this point you could divide the meat in half and make 2 one pound meatloaves or make one large meatloaf. Everything else stays the same.
Place meat on lightly greased parchment paper and press lightly. Meat should be flat, long and wide. Put potato mixture on top of the meat and spread evenly.
Lift one side of the foil and begin to roll meat until you reach the end. When you are done it will be in the shape of a log. Cut foil on both sides close to the log so you can place it in the pan.
Pour about 1 cup of tomato sauce into the pan with ½ a cup of water and spread it across the bottom of the pan.
Next place the log into the pan, turn upside down and remove parchment paper.
Pour remaining sauce on top and put frozen mixed vegetables around the side of the loaf and a few on top.
Cook at 350 degrees for about an hour to an hour and a half. Cook uncovered but pay attention so it will not burn. Meatloaf is done when it is browned and cooked throughout.
