Hearty Potato Leek Soup

Do you have too many potatoes sitting on your counter ? Tired of roasted potatoes? How about a hearty soup to warm up with on cold winter days. Potato leek soup is a fan favorite in our house. I have been making this soup for a long time, about 27 years. Whenever I smell the soup simmering, my mind goes back to a special memory. My Bubbie was sitting at our kitchen table and writing the recipe down for me as I created it at the stove. I remember my oldest was sitting in her high chair and Bubbie was playing games to entertain her so I could cook. I can see her so vividly smiling and playing with Shira, even after all of these year. This soup never fails to warm me , both body and soul. I still have the recipe card in my Bubbie's handwriting. I hope you give this recipe a try and enjoy it as much as the Wolf family does!


Hearty Potato Leek Soup


Ingredients:


3 leeks chopped (white and light green parts only)

3 medium onions chopped

2 minced garlic cloves

8 large potatoes chopped

3 tbsp olive oil

5-6 cups vegetable broth

2 tsp paprika

1 cup almond milk

Salt to taste



Directions:

  1. Heat olive oil in a large pot. Add in onions, leeks, garlic, and potatoes.

  2. Sauté mixture for about 15 minutes, until onions are very soft.

  3. Add in 5 to 6 cups of vegetable broth, depending on how think you like your soup.

  4. Bring to a boil and then turn down to a low simmer. Simmer for about 20 minutes, stirring often, until potatoes are soft.

  5. Turn off heat and mash some of the potatoes within the soup, leaving some whole.

  6. Add in Paprika and almond milk and stir together.

  7. Return to a low simmer for another 10 minutes.

  8. Salt to taste and enjoy!
