I personally love meatloaf. My mother would make meatloaf at least once a week. She would actually make mashed potatoes and peas separately because I hated peas back then. She then would, on the sly, mash the peas into the potatoes thinking I wouldn’t notice.


Well in my house today with my four children and husband we are split down the line. I often try to trick them by using the same recipe I use to make the meatloaf to make hamburgers. “ Guess what mom, these hamburgers are Amazing!!” How am I supposed to answer them? Being the smart alec that I am, I remark by saying “Really, well I used my meatloaf recipe and just shaped the meat into burgers instead of a loaf. Can someone tell me why if it is shaped into a hamburger or meatball is it more appetizing than in a loaf form?


I love meatloaf, hot or cold. I especially love it cold the next day as a sandwich on challah with ketchup. Meatloaf is comfort food, especially with mashed potatoes and peas. By the way, I love peas now. Here are a few different recipes to try, meatloaf stuffed or unstuffed. Let me know how your family responds when you make meatloaf for your next dinner. Maybe we can convert those picky eaters. I’m still trying :)


When reading the recipe remember that the loaf has the same ingredients and is placed in the pan the same way, it just is not stuffed. Actually, all you need to do if you are not stuffing it with the mashed potatoes and peas is form the meat into a loaf shape. Next, you can put it in the prepared pan with the sauce and water and then cover the meatloaf or two with the remaining sauce, depending on how many you made. Bake in a 350-degree oven and watch so the top doesn’t burn. If it is getting browned on the top, cover it with tinfoil. Bake for approximately 1 hour.
